Vitamin B12 for Vegans — Watch Out for B12 Analogues!

Vitamin B-12 MoleculeMany vegans assume they can get adequate vitamin B12 from sea vegetables. However, that is a common misconception. The B12 found in sea vegetables is not real B12, it’s a B12 analog — which can actually cause a deficiency of real B12.  Many vegans still assume we can get adequate B12 from natural soil bacteria if we don’t wash our veggies. However, do you want to eat veggies that may have been driven on a truck for hundreds or thousands of miles without washing them first?

In today’s “modern” world, produce is exposed to the air from the time it leaves the field until it arrives at your store. Even if organic, those veggies have not only been exposed to healthy soil bacteria, they’ve been exposed to everything in the air for many days, from pesticides to automobile exhaust. Unless you grew the veggies in your own backyard, using very good organic soil preparation techniques (see below), you really need to wash your veggies today! So neither sea vegetables nor soil bacteria can be reliably counted on as a source for your vitamin B12!

As stated by Gabriel Cousens:

“Up until this time, many of us have felt that additional Dr, Gabriel Cousenssupplementation for live fooders with sea vegetables or probiotic formulas was sufficient for protection against B-12 deficiency. This does not seem to be the case. In macrobiotics, who primarily cook their food, we see a very high percentage of children actually having growth retardation due to low B-12 intake. Many of us have felt that spirulina, Klamath Lake Algae, all the sea vegetables had enough active B-12 to avoid a B-12 deficiency.

Although the research is not fully in, we do know that … these substances do have human active B-12. The problem is they also have a significant amount of analog B-12 that competes with the human active B-12 … Using the methyl malonic acid reduction approach, which is now the gold standard, research showed that when people used dry and raw nori from Japan, the dried nori actually made the methyl malonic acid (MMA) status worse, which means it actually reduced the B-12 status.

Therefore it could possibly worsen a B-12 deficiency. Raw nori seemed to keep the methyl malonic acid at the same level, meaning it did not harm the B-12 status, but the research showed it did not particularly help it either. No food in Europe or the U.S. has been tested for lowering methyl malonic acid.”

The other argument often used by vegans is that your body produces vitamin B12 from bacteria in the large intestine, so additional sources are not necessary. While it’s true that your body does produce B12 in this way, your body will not be able to absorb it. As Dr. Cousens stated:

“There is one exception to this lack of vegetarian B-12 active food, which is that we do produce B-12 from bacteria in our large intestine, but since this B-12 is produced in the area below where B-12 is reabsorbed, it is really not available for absorption.”

“Most of the edible blue-green algae used for human supplements predominantly contain pseudovitamin B12, which is inactive in humans. The edible cyanobacteria are not suitable for use as vitamin B12 sources, especially in vegans.”

In one report:

“assays of vitamin B-12 in Spirulina Pacifica using the standard US Pharmacopeia (USP) method to measure total corrinoids reveals an average activity of about 7 micrograms per 3 grams of Spirulina (one serving size). Using the O. malhamensis assay in parallel to specifically measure human-active cobalamins the assay exhibits an average activity of 2.5 micrograms per 3 grams of Spirulina. These figures demonstrate that about 36% of the total corrinoid vitamin B-12 activity in Spirulina is human active.” — http://www.cyanotech.com/pdfs/spirulina/spbul52.PDF

Spirulina and tempeh contain mostly analogs of B-12. Herbert [1988] reports that tests on tempeh, a fermented soy product, and spirulina revealed that they contained almost no true B12, i.e., the “B12” they contained was mostly analogs. Herbert reports:

People taking spirulina as a source of vitamin B-12 may get vitamin B-12 deficiency quicker because the may different analogs in the product block human mammalian cell metabolism in culture, so we suspect that they also do this in a living human.

Analogs in fermented foods makes them unreliable sources for Vitamin B12.

Apparently, the impact on active B12 absorption from the huge (64%) amount of inactive B12 analogs in spirulina fills up the receptors in the body for B12, which leaves little or no room for whatever biologically active B12 might truly be present. So I don’t recommend relying ant on Spirulina as a source of B12, though it is in amany other ways a true super food that I use myself every day!

“Claimed sources of B12 that have been shown through direct studies of vegans to be inadequate include human gut bacteria, spirulina, dried nori, barley grass and most other seaweeds. Several studies of raw food vegans have shown that raw food offers no special protection.”

“Reports that B12 has been measured in a food are not enough to qualify that food as a reliable B12 source. It is difficult to distinguish true B12 from analogues that can disrupt B12 metabolism. Even if true B12 is present in a food, it may be rendered ineffective if analogues are present in comparable amounts to the true B12. There is only one reliable test for a B12 source – does it consistently prevent and correct deficiency? Anyone proposing a particular food as a B12 source should be challenged to present such evidence.”

Fresh, Raw Leafy Greens Protect Your Mind, Heart, Bones, Eyes & Skin

Fresh, raw leafy greens are one of the most important foods to eat on a daily basis!  Whether you enjoy your greens juiced, in a smoothie, a salad, and entrée or even in a dessert, adding as many of these to your diet will greatly impact and improve your health. If you’re not eating greens on a daily basis, I hope this article will encourage everyone to buy, grow, and eat lots of these powerhouse vegetables.

Leafy greens keep your mind young and sharp!

Most recently, Rush University Medical Center published a study reporting that eating just one to two servings of greens per day can protect against memory decline that is associated with Alzheimer’s and Dementia.  The study found that just one to two servings a day provided the person with a cognitive ability 11 years younger! Greens have high amounts of Vitamin K, lutein, beta-carotene and folate that work together to keep the mind sharp! (1)

University of Southern California completed research this year that shows that the lutein found in leafy greens can also protect your heart!  The study examined 480 men who had no current diagnosis of heart disease and examined their arteries! The study notice that those with less lutein had more thickening of the arteries.  Thickening of the arteries is one of the beginning stages of atherosclerosis.  (2)

A 2010 study found in the British Medical Journal completed a study involving over 22,000 participants.  They found that those who ate lots of leafy greens were less likely to develop type II diabetes!  The study reports that an increase of 1.15 servings per day may decrease your riskof type II diabetes by 14 percent! (3)

Leafy greens are also a great way to protect your bones!  We now know that it’s not just calcium that protects our bones, but a mixture of calcium, Vitamin K, Vitamin D,potassium and magnesium.  Leafy greens are a perfect food to help protect your bones and body from arthritis!  Kale gives you  550 micrograms of Vitamin K, this is over 680 percent of our daily needs! Leafy greens are not only a good source of Vitamin K but they also provide calcium, potassium and magnesium! Leafy greens protect your bones, eyes, and heart!

A 2006 study reported that those who ate leafy greens may help protect their eyesight!  Spinach in particular is abundant in antioxidants and vitamins. Spinach is a good source of lutein and zeaxanathin.  These two antioxidants were found to produce a substance that protects the eyes from macular degeneration! (6)

A study published in Nutrition Research compared collard greens with prescription drug Cholestyramine and found that collard greens improved the body’s ability to block cholesterol by 13 percent more than the drug!  Romaine lettuce carries high amounts of folic acid and has been found to boost sperm counts and improve fertility!

A Nurses Health Study reported that women who eat one serving of leafy lettuce daily cut their risk of hip fracture by 30 percent! (7)

Eat a variety of greens to get a variety of protection!

Wanting to lose weight or control emotional eating?  Spinach contains thylakoids which are shown to help suppress appetite.  A long term study from Sweden showed that people who consumed a drink high in thylakoids for breakfast significantly reduced cravings and experienced weight loss. (7)

One cup of beet greens has five grams of fiber!  Fiber has been shown to decrease risk of cardiovascular disease!  University of Leeds published a study reporting that our risk of cardiovascular disease was significantly lowered for every 7grams of fiber consumed! (7)

Last but not least, do you want youthful, glowing skin?  If so, eat lots of watercress!  This green contains four times more beta carotene than an apple and 238 percent of your daily recommended Vitamin K dose.  These two compounds keep your skin youthful!  Not only does it help your skin but watercress is also the richest dietary source of phenylethyl isoiocyanate which helps fight cancer! (7)

A quick way to boost your greens is to juice them!  Blending your favorite greens with fruit or carrots will help decrease the bitterness that some greens can provide. Throwing them in a smoothie provides the benefits without missing out on the fiber.  A berry smoothie with a handful of your favorite green is a quick way to boost your daily antioxidant levels and will help start your day out on the right foot!  However you choose, increasing your greens may provide you a higher quality of life and increased wellness.

My love affair with food began growing up in a large Italian family. Every night around the dinner table there was a wonderful sense of contentment! Delicious food and animated conversation nourished us on many levels. It was a time of innocence when “delicious” was the only criteria by which to consider food. My mother always prepared a balanced meal — meat, two vegetables, a starch and a salad. Our chickens were purchased alive and freshly killed by my grandfather. The produce was fresh from the 9th St. market in Philadelphia. The cold pressed olive oil came in great gallon containers from Italy.

On day things changed — the food changed. But nobody noticed. The oil was an insipid blend with no flavor. The butcher closed. Tubs of margarine appeared. Vegetables were frozen or in a can and everything came from a big corporate supermarket. The wonderful conveniences of modern living arrived – or NOT! Because what happened next is that my body also changed — all our bodies changed! My once delightful family meals suddenly caused unbearable stomach aches! As a child and I had no idea what was happening nor did my parents. All that I knew was that I was becoming ill. Eczema flared in my ears, I got my first flu.

All I wanted to eat was the romaine salad at the end of the meal. It felt fresh and easy on my body. Then in my early 20’s, I woke up looking like ET one morning – my eyes were creased and crinkled. My skin was flaking. All of my body felt wrong! I went to see a doctor, who sent me to a specialist and he sent me to another who sent me to yet another. I was seeing five specialists, who each gave me a different pill. With each passing day, I felt worse!

One day I found myself standing in front of a health food store. I went inside and wandered around, praying to understand what was happening to me. What happened next changed my life forever and led me to not only become a world class chef but to specialize in Raw Food. After wandering around the health food store for some time, the shop owner finally addressed me. I lifted my sunglasses and blurted my story. With great compassion, she suggested a holistic medical doctor. Out of desperation, I made the appointment. When I entered the office of Dr. Francesco Borella we began a two hour conversation. No doctor had ever spent that amount of time with me! At the end of the session he scheduled a series of tests, asked me to stop taking all the medications and handed me a recipe…a recipe?

Dr. Borella gave me a recipe instead of a prescription! Think about that with what we know today. The next morning I prepared Crème Budwig (recipe on right). It is a recipe created by Dr. Johanna Budwig, a German doctor and biochemist with a few more impressive university degrees. Whatever illness walked into her office, she always prescribed Crème Budwig.

On the fourth day I began to feel my brain fog lift. Then it continued to get better every day. When I went back to see the doctor my mind was clear! Under Dr. Borella’s care, I once again became the vibrant, energetic person that I had been before. He taught me that my best health insurance policy was to eat the best quality, organic, unprocessed foods, cold pressed flax and olive oils which had never seen the light of day in their extraction and a mostly raw vegetarian diet.

Whole raw foods nourish, cleanse, build a strong immune system and create a clear thinking, quick mind with a deep sense of peace and satisfaction. But the best thing is they actually taste better. I discovered that organic, whole, raw foods are not only packed with more nutrients, they’re packed with more flavor! As you begin to clear your mind and detox your body, something else amazing happens – you begin to clear your palate and discover all the amazing flavors associated with nutrient dense, organic live food!

So after a lifetime of enjoying whole, live foods I discovered that you cannot truly love food that has been cooked, processed, denatured and killed. If you feel you cannot live without bread, pasta, candy, ice cream, barbecue or whatever, that is not due to a true love of food – that is a food addiction! After decades of eating dead food your body has adapted chemically, down to the cellular level, to miraculously survive on dead food. Now you need it because changing the biochemistry at the cellular level requires months or years of detox — but like everything else in life, you cannot truly love something you need!

I became chef because I truly love great food. I am a raw chef because truly great food MUST be raw. To fully appreciate the intense, alive taste of real food it has to be a raw, whole, organic, live and unprocessed as possible! Of course, I’m not perfect, but I accept that when I have to eat some childhood comfort food that I am satisfying and nurturing some other part of my Self which is also important. But it is the whole, live, raw foods that are my one true love!

Raw Chef Denise’s Recipe for Crème Budwig

Crème Budwig
This month I am sharing the recipe for Crème Budwig created by Dr. Johanna Budwig. She was a German medical doctor and bio-chemist who came to the conclusion that the majority of chronic illnesses are caused by mass produced foods and oils, poor nutrition and pesticides which destroy our electrons. Through her research, she determined that combining a high quality protein with high quality Omega 3 fatty acids, such as flax seed oil, makes the fats water soluble. This allows the essential fatty acids to reach far deeper on the cellular level. This in turn allows the electrons to receive and interact with the sun energy which allows a reactivation of vital functions.

What is very interesting is that the latest research on vitamin D. Though it is fat soluble when ingested through the mouth, Vitamin D is actually water soluble, when we get it through direct exposure to the sun! It becomes D-Sulphate and in this form reaches deep into our cellular level. So, the fatty acids clean up the cells and the vitamin D appears to fortify proper cellular function. I marvel at the visionary research and wisdom of Dr. Budwig!  And I promise you, if done properly, you will noticeably feel the effects rather quickly of this luscious breakfast.

CRÈME BUDWIG

Ingredients for one serving:
– Juice of ½ of a lemon
– 2 tbs. raw yogurt or almond milk
– 2 tbs. cold pressed flax seed oil
– 1 ripe banana
– 2 tbs. sprouted grain (just one grain, like quinoa)
– 10 soaked almonds
– 1 apple or pear diced
– 1 tbs. sesame seeds
– 1 tbs. sunflower seeds

Soak almonds, sprout grains. Mash the banana and mix it with the first 3 ingredients into a cream. Add all the other ingredients. It can be sweetened with a touch of maple syrup.

RAW ALMOND MILK RECIPE

Ingredients:

– 1 cup raw almonds
– Pure water for soaking
– 3 cups pure water
– 2 dates (optional)
– 1/2 tsp vanilla (optional)

Soak almonds in water overnight (at least 6 hrs.). Drain water & rinse almonds with more purified water. Discard used water. Blend 3 cups of water, almonds and dates until well blended and almost smooth. Strain the blended almond mixture using a cheesecloth or other strainer. Homemade raw almond milk will keep well in the refrigerator for 3-4 days.

 

Conscious Disagreement — How to Disagree without Fighting!

Constantly fighting, arguing and invaliding each other actually inhibits our ability get in touch with the “whole being” within each of us. There actually are measurable physiological processes that become blocked — often right in your brain. In addition, there are emotional and spiritual blockages. As you clear these your arguments can become a conscious disagreement — making you a healthier, more caring person. That is the true nature of a “whole being.”

A truly powerful “whole being” can take on36454807 - balancing body, spirit & soul life’s challenges with compassion, wisdom, balance and trust. You can embrace all life’s challenges more responsibly, learn from them and grow closer together. Whole beings — nurtured by raw, living foods — naturally experience themselves fully as an integral part of the “whole.” 

I believe that is what we actually are when we aren’t inhibited by unnatural diets, beliefs and lifestyles. Over time a raw food lifestyle will help you experience that for yourself. It’s always simpler to disagree than to find what we have in common. But what we have in common is what we are really looking for. And that can come naturally from a healthy, empowered, whole being nurtured with raw, live and whole food.

While a conscious disagreement is much more likely to produce a satisfying outcome for both parties, it’s far from easy. Dropping our defensive armor may feel foolish or even dangerous. But being more open and vulnerable is far more likely to elicit a conscious response than being defensive.

Today, social networking, chat rooms and other online services has turned our writing into a virtual “conversation.” Just a few short years ago writers “wrote” and readers “read.” The Internet lets readers respond, make comments, reply to forums, share on Facebook and create their own blogs. And they do!

So today there even lot more disagreeing than ever before! That doesn’t always mean people are getting angrier. It’s just that he structural change in the way we communicate now is driving an increase in disagreement.There’s a danger that this will make people even angrier — particularly online where it’s easier to say things you’d never say in person.

So, if we’re all disagreeing more we should be more careful to do it well. I call that “healthy disagreement” — but what does that even mean?

The Disagreement Hierarchy

How to DisagreeName-calling – the lowest form of disagreement and probably the most common. We’ve all seen comments like, “u r a fag!!!!!!!!!!”  Even more articulate name-calling has little weight. A comment like, “the author is a self-important dilettante” is really nothing more than a pretentious version of “u r a fag.”

Ad Hominem – an ad hominem attack is not as weak as name-calling. It might actually carry some weight. For example, if a senator wrote an article saying senators’ salaries should be increased, one could respond, “Of course he would say that. He’s a senator.” This wouldn’t refute the argument but it may at least be relevant to the case. However, it’s still a weak form of disagreement. If there’s something wrong with the senator’s argument you should say so, and if not then what difference does it make that he’s a senator? Saying an author lacks the authority to write about a topic is just another form of an ad hominem—and is a particularly useless one, because good ideas often come from outsiders. The question is whether the author is right or not.

Responding to Tone – now we’ll see responses to the writing rather than the writer. The lowest form of these is to disagree with the author’s tone, for example, “I can’t believe the author dismisses intelligent design in such a cavalier fashion.” Though better than attacking the author, this is still a weak form of disagreement. It more important if the author is right or wrong or right than what his tone is. So if the worst thing you do is criticize the tone, you’re really not saying much.

Contradiction – Here we finally get a clear responses to what was said, rather than how or who. The lowest form of response to an argument is simply to state the opposite with no evidence. “I can’t believe the author dismisses intelligent design in such a cavalier fashion. Intelligent design is a legitimate scientific theory.” Sometimes just seeing the opposite stated clearly is enough to see that it’s right, though some evidence does actually help.

Counter-argument – Now we reach the first form of a convincing disagreement: counterargument. Arguments up to here can easily be ignored because they don’t prove anything. But a good counter-argument can prove something. When directed  at the original argument, it can be convincing, but more often than not the people are actually arguing about two totally different things — or even agree with each other but don’t realize it.

Refutation – The most convincing type of disagreement is refutation. It’s also the rarest form because it’s the hardest. To actually refute someone’s argument you probably have to quote them, you have to find the part of their argument you disagree with and explain why they’re mistaken. While refutation uses quoting, quoting an arguments doesn’t necessarily mean you’re refuting it.

Refuting the Central Point – The power of a refutation depends on what you are refuting — hopefully, the central point of an argument. Truly refuting something  means you have to commit to exactly what the central point is.

What Does It All Mean

The biggest advantage of understanding the 15277073 - conscious disagreementdifferent types of disagreements is that it helps us to see through intellectually dishonest arguments. An eloquent speaker or author can give the impression of winning an argument by using forceful words when in fact they may not have actually won the argument at all. However, most intellectual dishonesty is not intentional. The people making the argument with may really believe they’re really saying something. But the biggest benefit of disagreeing well is not it makes for better conversations but that it makes the people who have them much happier. Moving up the disagreement hierarchy makes people less mean so it can make more of them happier. People don’t really like being mean — they usually do it because they can’t help it.

Freedom, Terrorism & Raw Food — Nurturing a World of Trust

Freedom, Terrorism & Raw FoodDuring a time of crisis, we often are required to self-reflect, to get past our pain and anger, and to discover the opportunities inherent in any difficult experience. One of the most nurturing things a “whole being” can do at such a time is to look for deeper meaning  in the relationship between freedom, terrorism and raw food.

The real value of a whole, raw food lifestyle is that it empowers much more than just our health. You see, with a healthy body and mind we not only think clearly and less reactively, but with greater awareness, understanding, sensitivity and compassion. A healthy, whole being takes full responsibility naturally, doesn’t fall into fear and anger with a knee-jerk response to adversity, and has compassion for his enemies as well as his friends … albeit, in some cases, what I call “ruthless compassion.”

We have that whole being within us, just waiting to come out, and all we have to do is stop repressing it with a detrimental lifestyle and toxic diet based on death. We just have to stop killing our food and ourselves in order to rediscover ourselves. Death, in the form of dead food or any other form, creates death. Life, in the form of live food or any other form, creates life. It’s not profound. It’s just common sense!

This wisdom doesn’t diminish the horror of terrorist acts nor the guilt of the terrorists. But it puts it into a perspective in which we can be powerful, whole beings again rather than lose ourselves in a powerless “victim” state of mind.

Personally, I am committed to transforming the world! That is the essence of a Whole Being — to nurture meaningful change on a planetary scale! And that is the power that raw food helps you get back in touch with. You really can begin to change the world just with your nutritional choices.

Whole beings are always naturally powerful. The toxins in cooked and processed foods, however, block our natural power. As you can see in my article “Toxins Created by Cooking,” many of these toxins actually have a sedative-like affect on your brain — putting you to sleep. Perhaps cooking was the evil knowledge given to Eve by a snake, a symbol of fire  — and  cooking perhaps, in the Garden of Eden.

Toxins rob your body of energy as the body struggles to survive and maintain some semblance of “homeostasis” or balance. Toxins from cooking, not to mention the artificial flavorings and chemicals in processed and “fast” foods, can block the molecular “receptors” in your nose and mouth that would otherwise have a natural ability to sense vitamins, minerals, amino acids, fatty acids and other nutrients normally found in “real” food. With less energy, your ability to think clearly is hampered. With your body in survival mode, taking care of yourself instinctively sometimes becomes more important than caring for others. With imbalanced brain functions, you may become less emotionally balanced, more prone to anger, depression, anxiety or violence. These are just some of the short-term ripple effects of an unnatural, unhealthy lifestyle and diet. There are many more, as well as many long term effects from cancer to heart disease.

The opportunity of rediscovering a natural, healthy lifestyle is to re-empower ourselves to be “whole beings” once again, as we may have been in the Garden of Eden. As “whole beings,” we can approach life’s challenges with compassion, wisdom and trust. We can embrace these challenges responsibly, learn from them and grow together.

True togetherness for all people can only come from within. It can’t be imposed from the outside, by another person, political party or philosophy. For that to manifest itself we need healthy bodies, minds and spirits. A whole being, nurtured by whole foods, naturally experiences himself or herself as part of the “whole” — part of the “web of life.”

Today, with the all the terrorism we see every night on the news, trust is more important than ever. Fear creates distrust, especially of anyone that looks like the “enemy.” When some tragedy happens, the media can whip our anger and fear into a war-like frenzy. We can quickly learn to distrust neighbors with the wrong skin color or cultural heritage. The danger of that is that it opens us up to manipulation by the very terrorists we despise, and vastly increases the real danger that may be confronting us – the loss of the founding principles of freedom that has historically made our country great. When that happens, the terrorists win because what they want to defeat is our freedom itself. So it is essential for us to learn to unconditionally Trust our fellow Americans again, regardless of their politics, heritage, accent, hair color or skin tone.

Such trust only comes from within. It is unconditional, and not dependent on external factors. It comes from consciousness, responsibility and awareness. If we don’t learn to Trust unconditionally, we can dilute our ability to actually perceive real threats, distrusting everyone with a certain accent or viewpoint. Then, we spend all our energy and time investigating, complaining and arguing about the wrong people. It would be much more productive to simply trust each other. Then those that are not deserving of our trust will quickly stand out and be easier to locate and deal with proactively. Meanwhile, we will be healthier and happier ourselves. That’s the real American way!

Terrorism is a battle between the rigid ideals of a fundamentalist theocracy and the liberated institutions of a republic or democracy. These two systems of thought cannot coexist. Religious or theocratic governments have no real personal liberties and often actually despise the concepts of freedom that make American unique. Merely having “free” neighbors is a threat to them, an insult to what they believe, and perhaps even an intolerable temptation for which they feel an overwhelming guilt. So freedom itself is their enemy. They hate us for being free. They want to kill freedom itself.

In this battle between freedom and terrorism, the terrorists are already winning. Anti-terrorist legislation in American threatens to destroy our constitutional rights. In the end, this has little effect on terrorists, but is devastating to the lives of most Americans. You see, terrorists today don’t want to make a philosophical argument or negotiate for anything. They want to destroy everything we believe in because it’s antithetical to their rigid perspective.

Even deeper, terrorists want to destroy our faith in our lifestyle so that we destroy ourselves from within. That is exactly what is happening when, out of fear, we are willing to give up our Constitutional rights in the mistaken belief that will enable the government to protect us. But the Constitution that has been protecting us for over 200 years. Suspending it only makes us weaker and plays right into the hands of the terrorists. By destroying ourselves, and our belief in everything we stand for, we give new life to their crazy beliefs. Supporting the Constitutional ideals uniquely fundamental to only United States is truly the only way to resist all such radical points of view.

Sure, we must defend ourselves … responsibly, intelligently, and with a heart founded in the liberties this country was founded upon. But ultimately, brute force only generates more brute force, and more terrorists. You see, terrorism is like the mythological Hydra with many heads, you cut one off and ten more grow back in its place. So Israel is an armed camp, not a truly free country. The Israelis have been in this mode for half a century, and are no closer to solving these problems then they were fifty years ago. They’ve merely become experts at living with fear and at protecting themselves from those whom they fear. Every time Israel has won a war, they created more fear and hate in their enemies. Every generation of Palestinians has had fathers, mothers, grandfathers, grandmothers, sisters, brothers, cousins and friends killed in that conflict.

Do we want to export that negative energy to the shores of America? We have the highly sophisticated means today to create powerful, effective solutions without a knee-jerk reaction that kills everything America stands for — because when we do that, the terrorists kill much more than people…they kill our ideals.

Once we are willing to surrender our Constitution for perceived convenience, we’ll lose more rights as the violence escalates. For every bomb we drop there will be a dozen terrorists willing to die as martyrs on our own shores. We don’t need to paint scenarios of terrorists with biological weapons, nukes or fertilizer bombs. A simple can of gasoline in a shopping mall can become a weapon equivalent to several sticks of dynamite.

If the violence escalates, we’ll suspend even more rights. But it is inevitable that most of the impact of this “military rule,” will be felt by regular people, not terrorists. When all our police and military isn’t enough, the United Nations may be asked to lend a hand. Then, soldiers from foreign shores, who don’t necessarily care for our silly American notions of personal liberty, will be asked to help bring order further affecting regular Americans more than terrorists. Laws that regulate us, for our own safety, actually only impact the honest people who obey them. They rarely affect criminals who’ve chosen to operate outside the law.

I say this not to take a political stance or to go against our leaders and their difficult choices, but to demonstrate from a whole being perspective how violence ultimately only leads to more violence. Death leads to more death — and Life leads to Life. It’s the basic principle of raw food, applied to life itself.

Violence and death can’t ever result in true peace. It can’t create lasting security.  It won’t really make us safe from terrorism. That isn’t even some profound truth, it’s just plain old common sense. And this all comes about simply from a lack of Trust. Trust for ourselves, to be able to deal with the problems and fears of today’s complex world. Trust for our neighbors, who may have a different cultural heritage than ourselves. And Trust for God, The Great Spirit, Allah, Buddha or Jesus, who is guiding us all through life’s lessons no matter how difficult they may be. And Trust is just one of the things that come naturally from within a healthy, self-empowered, whole being – who, of course, prefers to eat whole, live food!

Without trust, living in fear and anger, we become mere victims who do not take responsibility for what happens to us. Instead we blame someone else. As victims, we have no power. We want to lash out, to destroy our enemy in order to reclaim our power. However, power truly only comes from within. You can’t get it back by destroying whomever you think took it from you because the very belief that it can be taken makes you a victim. So even if you destroy your enemy, a new enemy will inevitably crop up. This is the very nature of animals – the strong always prey on the weak. And when you are not manifesting as a “whole being,” all that’s left is your natural animal nature.

Tobacco companies knowingly promoted lung cancer for many decades in the name of profit. Arms companies sell guns to both sides in a war. And fast food companies are happy to sell you 99 cent hamburgers laced with toxins that scientific studies clearly show have negative health effects – and even market them to little children using images of clowns, toys and happy faces.

Such businesses are happy to build an oil pipeline that makes a huge profit — and even to start a war in distant lands to achieve their ends. To such a business you represent not a human being but a human resource – a worker and a consumer. To be more than that you need to be aware, awake, alive and fully actualized as human beings … what I like to call a “whole being.” And, believe it or not, being whole begins with what you choose to eat.

Death creates death. People that thrive on dead food thrive on dead thinking, dead beliefs, dead politics, dead economics, dead lifestyles and the means of creating more death. On the other hand, life creates life.

You can choose if you want to be fully alive, with the conscious joy engendered by whole, live foods and without the sedative effects from toxins found in cooked foods. You’ll discover clearer thinking, more awareness, purer consciousness and much more. And this isn’t some new age psycho-babble, it is proven in numerous scientific studies (for some examples, see the scientific references throughout my website. It’s not just a fact, its common sense for people that have all the facts. Dead food kills. Live food gives life. And the good news is that You Still have the Freedom to Choose!

Good Health in a Bad Economy – Get a Raw Food Bailout

Raw Food fruits & vegetablesIn economics, a bailout is supposed to be when a bankrupt or nearly bankrupt company is helped by another party (like the U.S. government) giving them assets that can be converted to cash so that the troubled party can meet it’s financial obligations. What our country really needs during an economic crisis is a raw food bailout — when a sick body is helped by a healthy diet giving it assets (live food) that can easily assimilated so that the body can meet all its nutritional requirements.

Of course, a bad economy is more difficult to deal with when you are also struggling with bad health! Poor nutrition can exacerbate negative emotions and make it more difficult to think clearly. Many diseases start with a cocktail of toxins created by cooking combined with the immune-suppressing effects of anger, stress, fear and hopelessness.

A raw food bailout is a great way to face this kind of crisis. It will help you be healthier — saving on medical bills and insurance. It will help you act more responsibly and proactively to find solutions. And it will even help you save on your grocery bills. You see, organic, raw food is as much as 200-300% more nutritionally dense, making it more economical in the long run than less expensive and less nutritious conventional produce that may also be laced with pesticides or genetically modified organisms with unknown health hazards.

First, as a raw foodist I’m at least 75% raw and 95% organic. So I rarely need to cook or even use natural kitchen tools. My poor stove is feeling a little neglected! But when I do, here is what I use.
Stay away from Teflon & PTFE or PFOA
These chemicals are used for making Teflon. The EPA has designated PFOA as a “likely carcinogen” and has already asked manufacturers to, pretty please, stop using PFOA. So polite! Of course, what’s not so polite is that PFOA pollutes over 95% of the blood of Americans — your blood! PFOA never breaks down in the environment, so every molecule produced since the 1940s when Du Pont invented Teflon, will be in our air, water and bodies FOREVER. In people and animals, PFOA causes cancer, birth defects and numerous other health problems. When you’re ready to replace your toxic non-stick pans with a healthy alternative, you’ll have 3 safe choices: ceramic, cast iron and stainless steel.
  • CERAMIC pans have no trace metals or chemicals that can leach into your food. For use on stove, in the oven or broiler – or the barbecue. Easy to clean, non-scratch, non-toxic.
  • CAST IRON: Cast iron is known for even heating, heat retention, durability and value. Remember to season cast iron pans to keep them rest-free with a permanent, natural nonstick surface. Cast iron is heavy and may not be the best choice if lifting is a problem for you. It’s also necessary to hand wash cast iron.
  • STAINLESS STEEL: Especially avoid alloys containing nickel (chromium and molybdenum may also be in some alloys). This is particularly important for people with nickel allergies. Get high grade 18/10 stainless steel, which may be sandwiched around an aluminum core. Benefits include helping to cook foods faster, retains heat longer, few hot spots, heats faster, uses less energy, doesn’t react with acidic foods, durable and long lasting, dishwasher safe, food doesn’t stick with use of oil (I prefer olive oil).
  • Copper cookware is also not recommended because copper cookware must be lined due to the dangers of copper poisoning.
Don’t Give Old Pots & Pans to Goodwill.
If it’s not safe enough for your family why would you want someone else using them? I recommend putting them in your recycle trash bin or taking them to a recycling company. You may want to check with your trash company first as some curbside recycling programs do not accept nonstick pans. If that happens, many scrap yards will take them.
Another alternative if other options fail is to look for a mail-back program. For example, Calphalon, a manufacturer of fine cookware, will take trade-ins and then safely recycle your old nonstick pots and pans.
Reminder – there are many other items and personal care products that that contain PTFE or “fluoro” or “perfluoro” ingredients including some brands of dental floss designed to “glide” easier between your teeth. This is not what I would call an important product “benefit.”
Other products often treated with similar toxic stain-repellents include new furniture, new carpets, water and/or stain repellent clothing, breathable fabrics like Gortex, flame-retardant products including baby items, padded furniture, mattresses and pillows. Fast food and microwave foods (you don’t buy those I assume) typically use packaging treated with PFCs. Always look for natural materials that are less flammable like leather, wool and cotton.
Eliminate the Microwave

I have I not used a microwave for almost 40 years! The microwave became popular in the 1960’s without any real research on the effects of eating microwaved food.  What little research done more recently on the effects of eating microwaved food has shown that microwaves make fats and proteins much more difficult to assimilate.  Studies in Switzerland also show that the microwave cause changes in vitamin content and availability.  Eating microwaved food results in abnormal blood profiles like those that occur in early stage cancer. And please, never use a microwaves for heating baby bottles – the altered amino acids in microwaved milk can be toxic to the liver and nervous system particularly for infants.

Finally, damage to your food isn’t your only problem with microwaves. Many microwavable foods are usually processed and packaged using a variety of toxic chemicals, including benzene, toluene, polyethylene terpthalate (PET), xylene, and dioxins (known carcinogens). These chemicals can absorb into your food. One of the most dangerous of these contaminants is BPA, an estrogen-like plastic that leaks from most plastic packaging into the food, disrupting normal hormone activity.

Valuable Kitchen Tools
  • Vitamix & Blendtec: I have had a powerful high-speed blender (Vitamix (or Blendtec) for almost 40 years. I use it daily for smoothies, sauces, chopping – you name it! If I could only have one of the appliances on this list, I’d keep my Vitamix or Blendtec.
  • Ninja Blender: I also have a small but powerful Ninja for small but fast smoothies as well as sauces, soups, purees, and more.
  • Food Processor: I also use this often for chopping veggies for soups or salads.
  • Dehydrator: I’ve gone through many cheap dehydrators over the years, but now I stick to the better, square-design models like the Excalibur and Tribest.  Dehydrators are great for drying fruits, veggies and more.
  • Water Filter or Alkaline Water Ionizer: I use my Life Water Ionizer every day to filter all the water I use for cooking, drinking, etc. This is the best water filter/ionizer option I’ve found. The model I use personally, and recommend highly, if from Life Ionizers.
Cookware

I prefer raw food but when I do cook is use cookware that is natural/eco-friendly and also easy to clean.

  • Ceramic skillets cook evenly and are easy to clean. However, they are breakable so I be careful when cleaning them.
  • Cast Iron: A cast iron pan can last forever.
  • Steel Pans
Kitchen Tools
  • French press for making coffee or tea without contact with plastic and much better flavor.
  • Fermentation crock pot if you want to make fermented favorites like sauerkraut — filled with live enzymes and flora.
  • Quality Knives are always one of the most valuable items in any kitchen.
  • Tea Kettle (glass, cast iron or steel): I drink a lot of herbal tea in my house.
  • A Julienne Peeler for carrots, sweet potatoes, zucchini, etc.
  • A Mandoline to grate, slice or cut your veggies.
  • Bamboo cutting board, an alternative to plastic or glass.
Other Handy Items
  • Cloth Napkins, an alternative to paper.
  • Large steel bowls for mixing and serving.
  • Stainless steel straws, eco-friendly option for drinking my smoothies every day.
  • Metal Water Bottles.
  • Glass water bottles.
  • Quart size & Pint Size Mason Jars for drinking glasses, food storage, etc.
  • Sprouting lids for mason jars.
  • Gallon size jars for fermentation and storage.

You Gotta Love Raw Virgin Coconut Oil

“Microclusters” Help Live Water Easily Penetrate Your Cell Walls

The Science of Microclusters

Given how important water is to life, there are Living Wateramazingly few actual studies on the nature of water and the science of microclusters. Many scientists are happy just to accept that water is just two hydrogen atoms and one oxygen atom. More recently, concepts based on “quantum biology” are exposing more of the subtle characteristics of the ubiquitous water molecule. This makes sense since water is ultimately the basis for ALL life — so of course you’d expect water to have some quantum characteristics that mainstream scientists haven’t quite figured out – like microclusters!

The feature of water of particular interest to raw foodists, vegans or anyone interested in the highest quality water is called its cluster size!  For the easiest, maximum absorption of water into your cells, the smaller “micro” clusters of water (5-6 molecules) are far superior — easily penetrating cell membranes through channels called “aquaporins.” Larger clusters of water molecules, from a dozen molecules up to several dozen, are too large to pass through these tiny channels.

Most of the water we drink today is either pumped from springs, long since corrupted by commercial “water mining,”  or bottled in cheap plastic containers which damage its molecular structure and pollute it with toxic chemical plasticizers. Even even remote pristine springs are now commercialized and polluted, no longer producing the same quality they used to offer a couple of decades ago. Then the water is bottled or pumped though pipes for  hundreds of miles. It is nearly impossible now to find pristine water that you can drink at home, and if you do it will cost you more than most drinks you buy at the corner store. Today, even Aquafina, bottled by Pepsi, costs more than a can of Pepsi. its also more profitable! Yet it is nothing more than filtered tap water. Same for Coke’s Dasani.

The Hunzas

Believe it or not, there are still five (5) locations left in the Hunza Womanworld where you can find natural water with extraordinary characteristics, including microclusters. This is also where  people there typically live to be over 100 years old in excellent health — with no cancer, no dental caries (cavities) and little or no illness. They still even have children well into their old age! These are Hunzaland in the Karkorum Mountains (north of Pakistan in the Himalayas), the Vilcambamba in Ecuador, a high mountain valley in Georgia, Russia, another in Mongolia and the final one in Peru. Though all these areas have different cultures and diets, they all have just one thing in common: their water has similar properties – especially the possibility of “microclusters!”

“Microclusters” in water are one of the least understood and most controversial subjects associated with alkaline mineral water, or ionized water. But there appears to be evidence using NMR (nuclear magnetic resonance) technology that ionized water forms stable “microclusters,” which was once thought to be impossible … and still is today by many. You can’t “see” the structure of hexagonal water normally. However, when it is frozen, hexagonal (six-sided) crystals are formed (i.e., like a snowflake). In the pictures below you’ll see other comparison shots under a microscope of hexagonal water and ordinary tap water.

It’s important to note that “microclusters” aren’t literally physical “clusters” of water. A lots of folks marketing water io9nizsers love to “debunk” microclusters because they wrongly think that erms is literal. It’s not.

“Microclusters” is actually just a loose nickname that refers to an “electrostatic charge” that can loosely hold a group of water molecules together. Here are some good references:

The water that comes from your kitchen sink is normally “clustered” in loose groups containing 10-20 molecules or more. These groups form through a weak bond that breaks and reforms very easily and is what gives “microclustered” water many of its unique properties. The process of ionization changes the electrical properties in water (ORP) and theoretically restructures the groups or clusters into about half their original size, or 5-8 molecules. This  lets microclustered water penetrate the body’s cells more easily through aquaporins.

Aquaporins

In 2003, Peter Agre of John Hopkins University received the Nobel Prize for Chemistry for his work on aquaporins.  Aquaporins allow the water we drink to pass through our cell membrane one molecule at a time. Theoretically, normal water with 10-20 molecules per cluster cannot easily penetrate aquaporins. But microclustered water with just 5-8 molecules can let single molecules penetrate more easily through cell membranes, hydrating the cell faster and more and effectively.

Fortunately, you actually CAN get “microclustered” alkaline mineral water right in your home home, without traveling to Ecuador — by making it yourself . Nuclear Magnetic Resonance (NMR)

We also know from NMR that electricity appears to reduce similar “clusters” in water to just 6 or so molecules, a property that lasts for up to 2 months. After that stored water reverts to large molecular groups again. Dr. Mu Shik Jhon originally did a study showing that there does appear to be a clear and well-defined difference between “Hexagonal Water” and tap water. Dr. Paul Shin, an NMR expert, tried to repeat this experiment and wrote, “Sure enough, I was indeed able to replicate his data precisely!”

“Nuclear Magnetic Resonance (NMR) is a scientific method to measure the electromagnetic radiation emitted by the magnetic nuclei of molecular structure.  NMR is one of the principal techniques used to obtain physical, chemical, electronic and structural information about molecules due to either the chemical shift, Zeeman effect, or the Knight shift effect, or a combination of both, on the resonant frequencies of the nuclei present in the sample. It is a powerful technique that can provide detailed information on the topology, dynamics and three-dimensional structure of molecules in solution and the solid state. NMR O17 is used to test the water cluster size, and hence make a determination of the molecular arrangement of the water under test, providing a measure of the quality and purity of the water. The line width in Hz is used to determine the change in the water through NMR testing. A line width of 50Hz to 60Hz is closer to water’s natural state, and better for human consumption. In 1976, Lee Lorenzen was a graduate student doing research at a University in California. Like so many aspiring researchers, his vocation was chosen because of his desire to make a difference in the health and happiness of others, but what he found was a model that wasn’t always working. Over and over again he saw that the medications he was researching appeared to be causing more harm than good.

“I remember saying to myself, over and over, in those days,” recalls Lorenzen, “Something is missing with this model.” Then it happened – a chain of events which ultimately led him to the discovery of water clusters and a method of stabilizing them.

During research using experimental rats, he was bitten and contracted a serious illness. Shortly thereafter, his wife was hospitalized with double pneumonia, and she began a downward spiral into chronic fatigue syndrome, fibromyalgia, arthritis, Epstein Barr virus, and severe immuno-suppression. With Lee ill and his wife bedridden, taking care of their two toddlers became almost impossible. For the first time in their lives, they got on their knees and prayed for help. “I went to the UCLA library, one afternoon.” says Lee. “As I walked down an aisle, I noticed a little red book which was sticking out from the shelf – a book which was written in 1962 by the Nobel Prize laureate, Dr. Albert Szent-Gyorgyi. As I read it, things began to make sense about cell water.” Months of research eventually led Lorenzen to the healing Spring of Lourdes, France. Oxygen is essential for the body.  It is essential for so many vital functions including brain performance and digestion.  Because of this, it is imperative to make sure that the air we breathe is rich in oxygen and that our bodies are ready to make maximum use of this important substance through proper nutrition and plenty of oxygen producing plants throughout your home.

Houseplants are a great way to increase the oxygen present in our homes.  Not only do they look great and provide many added benefits, such as stress relief, healing, air purification, and more, they increase the oxygen content in the air in a clean way (1).  This added oxygen in the air we breathe, in combination with good nutrition, can make our homes a place of passive healing where cognitive health, muscle strength, and digestion can be improved.

Health Benefits Of Increased Oxygen

The health benefits of increased oxygen in the body are countless.  Oxygen is essential for every cell in the body to function.  With increased oxygen, the brain, muscles, and digestion can all work more efficiently.  Without adequate oxygen in the air we breathe, we may experience dizziness, nausea, headaches, fatigue, exhaustion, irritability, anxiety, depression, frequent fevers, colds, or lung diseases. Using Houseplants To Oxygenate Our Home

Houseplants are a great and effective way to increase oxygen levels in our home.  Plants vary greatly in their ability to increase oxygen levels depending on many factors including species, size, health, and light levels.  Yet, even a small unhealthy plant grown in low light will improve oxygen levels to some extent.  It is recommended that to noticeably improve air quality though, we would need to have at least one houseplant of medium size for every 100 to 120 square feet of space. Diet to Maximize Oxygen Absorption

Having lots of oxygen in the air we breathe is only one part of making sure our blood oxygen levels are sufficient.  There are also a number of considerations related to diet and nutrition to take into account to make certain that our body is able to properly utilize the oxygen that it takes in. As raw foodists or overall veggie eaters, there are a few key nutritional considerations that we should be paying close attention to — mainly the intake of iron, vitamin B12, and protein. Your body leverages these, and other nutrients, in order to utilize oxygen (8).  Making sure to add a variety of foods, such as a variety of greens and vegetables, sprouts, and seaweeds is key to ensure proper oxygen absorption.

Finding the Right Plants for Oxygenating

All plants produce oxygen, but they all vary in the amounts they produce.  Some plants have the added benefit of being edible or having medicinal or cosmetic properties.  Others are particularly good at purifying the air from common toxins such as formaldehyde, benzene, and trichloroethylene.  There are even houseplants that can be particularly beneficial for removing mold.   Here are some common houseplants that produce particularly high levels of oxygen, with the bonus of some other added benefits:

  • Aloe Vera
    Aloe vera is a great plant for oxygenating the home, as well as boasting many other useful qualities.  It is a very healthy edible, particularly great in smoothies, great for healing burns and cuts, and a wonderful skin cream.  In addition, it removes formaldehyde from the air.
  • Peace Lily
    The peace lily is one of the plants noted for removing mold from the environment.  This makes it a great plant for bathrooms, laundry rooms and even basements with some natural light.  It is happy in low light and thrives on heavy watering followed by long periods of dry.  It also filters a very long list of air pollutants.  On top of all this, it is a very attractive plant that flowers regularly.
  • Rubber Tree
    The rubber tree is an attractive plant with very large leaves that can grow quite large.  It does well in low light with infrequent watering making it a great choice for those with less than ideal growing conditions.  Besides being a high producer of oxygen, this plant is very good at removing formaldehyde and other toxins from the air.  It grows from cuttings, making it easy to multiply.
  • Ficus Tree
    The ficus is one of the easiest plants to care for.  It thrives in low light and can tolerate infrequent watering, and it takes well to propagation and pruning.  It works great as a general air purifier.
  • Chinese Evergreen
    This plant does well in full shade making it a good choice for areas farther away from windows, or in bathrooms where light is often limited.  It acts as a great air purifier for formaldehyde, benzene, and other indoor toxins. (9)

It’s probably an obvious statement, but your local environment has a significant effect on your health. And, while nutrition certainly plays a role, we should be considering the overlap of other factors that affect our daily lives, such as oxygen producing plants.
